Have you ever made lunch and just thought to yourself.. this right here, this is HEAVEN! It's healthy, tasty and just good in every sense of the word. Shall I share my lunch-time little slice of heaven with you..? Before we go on, I'm sorry but it's not "Death by chocolate" chocolate cake! Although that's one way of getting there. This is more of a feel-good, I'm on the right path to becoming an angel lunch! Right I'm going to just say it! Today I went to the shop (Primark) to get some shoes, and while I was there looked at the black trousers.. suffice to say I had a bit of a wake up call. The trousers fit! It's just my body that wasn't really all that fit! #rockwhatyourmammagaveyou See I started a gym like two months ago and as everything always does to begin with it was going well. But then I just didn't "find the time" so not my plan is to do regular classes! I seemed to really enjoy that as opposed to working out for 40mins. So anyway.. healthy bod is STILL a "work in progress" I'm not defeated! I just need to knuckle down and make some good choices. So the last few weeks I've been having salad for lunch!! And I'm going to share my recipe with you. You can add and subtract to make it your own! And I bet you guys have really nice ways of making a quick salad.. pls any hidden gems, share with me! I've kept it to really just 3x main ingredients. :) This is a quick recipe for a "Feel good/Healthy, Salad" All my ingredients (this time) were Tesco! But I also love Lidl* Quickly delish, (Lunch) *Rocket leaves & Mixed baby leaf/Beetroot salad *Avocado *Baby Toms Dressing (Healthy ish) *Balsamic vinegar *Red Hawaiian salt & Himalayan Pink salt *Cracked black pepper & white pepper *Maple syrup #optional (ok this is if you need a little inner hug, only a few drops don't go mad with it) On the side* If you're feeling particularly in the mood to treat yourself to a little bit more heavenly healthy food, simply mixed berries do the trick. 3x of my faves are; *Blackberries *Raspberries *Blueberries Grab a small handful of both leaves, (wash everything) through in the baby toms, slice the Avocado in half and grab half flesh side down, squeeze skin together to remove the soft creamy goodness! Do the same with the other half. Drizzle a little balsamic vinegar over, crack the salt to taste, same with pepper and add a few little drizzles of maple syrup 🍁 (optional!! It's not essential, or technically healthy so to speak, so now an then!) So this is my little bit of "lunch" Heaven* Speak soon, :) Yx
